Pearse Distiller’s Choice 7 YO

In May 2019 some new Irish whiskeys arrived in Norway. They are from Pearse Lyons Distillery in Dublin. Pearse Lyons bought two small-batch copper pot stills from Kentucky in 2011. The pot stills have been christened Mighty Molly and Little Lizzie in honour of the Lyons family’s distant relatives. Mighty Molly is the wash still and Little Lizzie is the spirit still.

I wrote about Pearse The Original 5 YO last week. Today it is time to try out their 7 YO called Distiller’s Choice. This is what they say about it:

A blend of Irish grain and malt Whiskeys, hand selected by our head distiller. It is predominantly aged in Bourbon barrels with a small amount of Sherry barrel aged whiskey in the mix. It is a 7-year-old blend. This Irish Whiskey has single malt in it that has been produced on the stills that are now at Pearse Lyons Distillery at St. James.

The whiskey is bottled at 43 ABV. It is available in Norway at NOK 699,90.

Bubblegum with peppermint on the nose. Oaky and spicy. I get nutmeg and white pepper. It gets more warm after a while with baked apples. Then it changes again. Cardboard, a bit wet. Chalk, soil and mineral clay. A bit watery and oaky on the palate at first. Then it turns warmer with spices and lots of licorice. Black pepper, cardamom and bay leaves. A hint of chili. The finish is warm and oaky. Quite dry. Peanut shells and cardamom.

My score: nose 20 / taste 19 / finish 19 / balance 20 = 78
