Tobermory Distillery is located on the Isle of Mull in Scotland.
At Tobermory we produce two distinct single malts made for half the year each: a non-peated Tobermory and a heavily-peated (30 – 40ppm phenol) Ledaig.
Today I am tasting a Tobermory from the independent bottler whic and their bottling series sujet III. The whisky was distilled March 1995 and bottled January 2017 which makes it 21 YO. It was given a 8 months finish in Sherry octave #328a, 328b and 328c. The outturn was 231 bottles at 48,6 ABV.
Heavy sherry notes on the nose. Rich and complex. I get overripe peaches, prunes, dates and mango. Spicy and some solvent notes. Smooth and rich fruity notes on the palate. Peaches, plums and dates. Also red, baked apples. The finish is fruity sweet. Peaches, melon and papaya. White pepper and nutmeg.
My score: nose 22 / taste 23 / finish 21 / balance 22 = 88
