Earlier this Summer I shared my tasting notes on two whiskies from Pearse Lyons Distillery located in Dublin. The first two were blends (read about The Original 5 YO and Distiller’s Choice 7 YO) while todays whiskey is a 12 YO single malt named Founder’s Choice. Pearse Lyons bought their copper pot stills in 2011. This means they do not have 12 year old whiskey yet, so where is the whiskey produced? The whiskey is distilled at Cooley Distillery in Ireland.
Founder’s Choice has been matured in bourbon casks for 12 years and is bottled at 43 ABV. It is available in Norway at NOK 799,90.
Smooth, elegant and light on the nose. Peaches, grapes and basil. The smell of flowers – in a good way! A bit like walking in a rose garden. Bubblegum with watermelon and strawberries. Delicious! The taste was more plain than what I expected from the nose. Very green, actually. Mint, thyme and basil. Salad maybe? Some oak and nut shells. The finish is nutty and a bit oaky. The aftertaste is like the taste of eating mint leaves in a cocktail.
My score: nose 23 / taste 21 / finish 20 / balance 21 = 85
